Tomato Relish




  • 1.5kg tomatoes                                                                  
  • 500g onions           
  • 2 cups sugar          
  • 2.5 cups vinegar
  • 1/4 cup flour       
  • 1 tablespoon curry powder   
  • Pinch cayenne
  • 1 tablespoon dry mustard                 
  • 1 tablespoon salt

1. Cut up tomatoes and pour off 3/4 cup of juice.  Cut up onions finely.  Put in a saucepan with tomatoes, sugar and vinegar.





2.  Boil slowly until it thickens.  Blend flour, curry powder, cayenne, mustard, and salt with tomato juice.  Add to saucepan and stir until boiling.   Cook gently for 3 minutes, bottle in warm jars and seal when cool.
